I'm running Raybestos ST43's and have been really happy with them . They wear extremely well, and have a nice linear feel to them. I'm getting my stuff from Girodisc and running their 2 piece rotors. They are a local WA company so I like helping out.
PF stuff would be next on my list. I've heard OK things about Hawk DTC 60/70's but never tried them.

I've been runnin EBC YellowStuff for 2 years, I dont have a single complaint which is why i havn't switched... I ran at NPR in Louisiana in 100+ degree heat, my tires were literally smoking at the end of each session and my brakes were still stopping on a dime, however, the pads dont last very long.. But they are really cheap on thepartsbin.com

On the GT-R, I've been running AP Racing J-hook rotors and Carbotech XP8 pads. This is a significant improvement over OEM. When the XP8's are ready to be replaced, I have a set of XP10's in the garage waiting to be installed. From what I understand, the XP12 and XP16 would overpower the OEM tires (Dunlop 600's), so the XP10's are about as aggressive as I will end up going.

Hey billy, get PFC to make their pads for the S-series saturn. The best off the shelf option we have is EBC Redstuff.

I'm not sure if the demand is large enough, haha. Unless you want to buy 10 sets and be good forever
